As I was trying to prepare dinner yesterday with very minimal ingridients left in my refridge I decided to just go with my heart and create something delicious and unique, so I am naming it Chicken For Lovers since I was cooking it with so much love thinking of Valentines Day. I hope you get to make it today for your loved ones and love it as much as we did.

This is an original recipe by Jen Rubio.

This meal is a one-pan meal, and it will only take you 20 minutes to get it done and enjoy. It is the perfect quick dinner when you are running late with dinner plans or out of work and want to enjoy a delicious and comforting dinner that will make your heart warm and belly full. :)

INGRIDIENTS

4 Garlic pieces

1 Shallot

4 to 6 Chicken thighs / Chicken breast would work as well

Flaky Sea Salt and Pepper (or any salt you prefer)

1 Lemon Juice

Parsley

All Purpose Flour

Orzo/ or any type of pasta

Cooking Olive Oil

Butter

Chicken Stock

Plain Greek Yogurt

Milk

Parmesan Cheese (shredded yourself for better flavor and unnecessary chemicals)

DIRECTIONS

Chop the garlic, shallot, and parsley, set them aside, and start preheating a deep pan on medium-high. In the meantime, season your chicken with just salt and pepper and coat each piece of chicken with flour on both sides. When your pan is preheated, add the cooking olive oil and butter, mix them together, and then start cooking the chicken until both sides look golden and a little crispy. I usually do 5 minutes on each side. Once your chicken is done, take it out and set it aside. Add the garlic and shallot to the same pan, stir until they are a little golden, then add 2 tablespoons of flour to the pan, mixing it all together for about 2 minutes. Add 1 cup of chicken stock, 2 tablespoons of Greek yogurt, half a cup of milk, and a pinch of salt, whisk it all together, and once it is bubbling, add the lemon juice and parsley, mix it in, and add your chicken and uncooked orzo to the sauce. Let it cook for 6 to 7 minutes and enjoy!
